Trevally is found in most oceans, and is held in high regard for its culinary properties. The Japanese revere Trevally for sashami, and at Aquafresh, we hold it in the same regard for smoking. It holds its shape well, and presents a superb flavour to the pallete.
Our fish is taken fresh off local boats, prepared then smoked using South Island beech and manuka sawdust for a distinctly kiwi flavour. We then vacuum pack it to seal in its fresh flavour and moistness. 100g Tray pack, ready to serve. Simple remove the protective seal. Prepared, smoked and packed at our Nelson Smokehouse.
Aquafresh smoked Trevally is delicious in a simple pate, made from cream fraiche, dill, a dash of sweet chilli sauce, cracked pepper and pink Himalayan sea salt.
